The ultimate fudgy, gooey skillet brownie for 2 and chocolate covered strawberries

When I think about something special for Valentines Day chocolate is at the top of the list. These brownies are served warm with ice cream, molten chocolate, warm and gooey is the ultimate valentines day treat! Top it off with some chocolate covered strawberries. The brownies are simple to make, no fancy equipment, all you need are mixing bowls and a spoon. Happy Valentines Day and here’s how.

Chocolate Covered Stawberries

Semi Sweet Chocolate and milk chocolate, chopped or chips (I like to mix it up)

Strawberries (clean and dry)

Clean and dry the strawberries, make sure you let them air dry before dipping in chocolate. Melt chocolate either in the microwave or over a double boiler. If using a microwave break or cut chocolate into small pieces and place in microwave safe bowl. Microwave on high in 30 second intervals stirring in between until completely melted. If using a double boiler, place a small amount of water in a pot, bring to a boil then reduce heat to low so the water simmers. Place bowl over the simmering water on top of pot, bowl should not touch the water. Place chocolate in bowl and stir until chocolate is melted.

Dip strawberries in melted chocolate, place on sheet pan lined with parchment paper and refrigerate until chocolate is set.

Skillet Brownies

Adapted from a recipe by Ina Garten

1/4 c flour

1 tsp baking powder

1/4 tsp salt

2 large eggs

1/2 c +1 tbs sugar

1 1/2 tsp espresso powder

2 tsp vanilla extract

1 stick salted butter

2 oz dark chocolate chopped (or use chips)

2 oz milk chocolate chopped (or use chips)

1 1/2 ounce (3 tbs) unsweetened cocoa powder

1/2 c chocolate chips or chopped chocolate (I used 1/4 c dark and 1/4 c milk chocolate)

1 tbs flour

Sift or whisk flour, baking powder and salt and set aside.

Place butter, chocolate and cocoa powder in a bowl over a double boiler and melt, stirring to combine. Let cool to room temperature. Note: you can also use a microwave but recommend double boiler. Sift or whisk together the flour, baking powder and salt, set aside.

Stir eggs, coffee powder, sugar and vanilla just until combined. Add the cooled chocolate mixture and stir to combine. Fold in flour mixture. Fold in chocolate chips tossed with the 1 tbs of flour. I used 2 six inch cast iron skillets but you can use individual baking dishes, ceramic or glass set on a sheet pan. Bake in a pre heated 350 degree oven 40-45 minutes (don’t overbake). You want them soft and gooey. Top with ice cream of your choice. Note: If using smaller or individual baking dishes (3 or 31/2 inches) reduce baking time to 25-30 minutes.
