Pizza, deep dish, thin and crisp, what’s your favorite?

Pizza, whether you like it thick (deep dish) or thin its hands down a favorite meal for so many. From a simple pizza Margherita (fresh tomato sauce, fresh mozzarella and basil) or a deep dish cheesy pizza loaded with toppings your taste buds are in for a treat. Buy pizza dough from your local pizzeria or grocer or use my recipe for simple no knead pizza dough (flour, yeast, water, olive oil and salt), here’s how!

Simple no knead pizza dough

2 1/2 c flour (Note: 00 pizza flour is awesome if you can find it)

2 1/4 tsp instant yeast

1 tsp salt

1 cup lukewarm water

2 tbs olive oil

Mix all ingredients together into a shaggy dough, make sure all the flour is incorporated. Cover with plastic wrap and a tea towel and refrigerate overnight for a more fully developed flavor, for a quick pizza dough, cover and let rise at room temperature 90 minutes. To make the pizza, gently knead the dough just to bring it together. You can press (deep dish) into a pan coated with olive oil (I like a cast iron skillet) or for thin crust you can stretch into a round watch Jim Lahey make pizza, and bake on a stone or baking sheet at a very high oven temperature, 450-500 degrees. The beauty of pizza is that you can make it your own, tomato sauce, mozzarella, grated cheese, your choice of meat, vegetables. Get creative you can’t go wrong,
