No churn ice cream, so easy and creamy a delicious warm weather treat

Black Forest No churn ice cream

The easiest and have to say most gratifying recipe ever for no churn ice cream. No standing over the stove making a custard, waiting for it to cool and then churn in an ice cream maker. The base recipe is a mere 3 ingredients (4 ingredients if you add vodka), Sweetened condensed milk, heavy cream, vanilla, that’s it! Flavor it how you like, add chocolate, coffee, fruit, berries, nuts, swirl in a fruit compote for a ripple or swirl, whip some cream cheese or mascarpone with the cream for a cheesecake flavor. Spoon into a loaf pan and freeze, you can also play around and make popsicles! You got this, here’s how to make it. Note: the vodka, only 2 tbs will keep the ice cream scoopable as it can become hard in the freezer.

Strawberry, vanilla and chocolate ganache popsicles

Basic No churn ice cream

1 10 oz can sweetened condensed milk

2 cups heavy cream

2 tsp vanilla extract

2 tbs vodka (optional)

Mix the vanilla with the condensed milk and optional vodka, whip the cream to soft peaks and fold into the milk. Spoon into a loaf pan, cover and freeze at least 4 hours or best overnight.

If you want to try the Black Forest you will need frozen cherries (10 oz) 1/4 c sugar, 3 tsp cornstarch, pinch of salt, dark chocolate chopped (1 cup). Cook the cherries, cornstarch, sugar and salt until thickened, refrigerate until cooled or overnight in a lidded container. Stir the chocolate pieces into the ice cream base. To make a swirl, spoon half of the ice cream base into the loaf pan, drop spoonfuls of the cherry compote on top and using a butter knife swirl it, add the rest of the base repeat with the cherry compote and swirl. Freeze over night.

If you want to try popsicles, spoon some strawberry into the mold, freeze for an hour or so, make a ganache using 2 oz chocolate and 2 oz scalded milk stir until melted, once cooled spoon some on top of strawberry layer, freeze for 1 hour, lastly add the vanilla ice cream base, insert popsicle stick and freeze overnight.

For key lime add 1/4 -1/2 cup key lime juice mixed with the vodka to the ice cream base, crush graham crackers and mix some melted butter and a few tbs of sugar (like you are making a graham cracker crust), spoon in half the ice cream base, sprinkle some of the graham crackers on top, add the rest of the base, smooth and freeze.
