Coconut lime slush-with or without alcohol

This frozen drink has all the components of a Pina colada with the addition of lime. The drink base is frozen in ice cube trays and stored in a zip lock bag or freezer safe container. The beauty of this is that you can make one or more drinks at a time, the base is frozen in cubes and stored in the freezer so remove as many as you need, add pineapple juice and rum (if using alcohol), blend and enjoy! Recipe can be doubled or tripled.

Coconut lime slush

Lime simple syrup

peel of one lime

1/2 c sugar

1/2 c water

Base:

1/4 c lime simple syrup or to taste

1 13.5 oz can unsweetened full fat coconut milk

Peel the lime with a vegetable peeler, add the lime peel to a pot along with the sugar and water, bring to a boil, stirring until the sugar is dissolved. Remove from flame, cover and let sit until cooled. Remove the peel and pour into a jar, refrigerate until ready to use.

Add the peeled (pith removed) and quartered lime to a blender along with the coconut milk. Blend until pulverized and strain into a measuring cup, add the lime simple syrup, stir to combine and pour into ice cube tray or trays. Freeze until hardened. Double or triple the ingredients to make more of the frozen cubes.

Making the drink:

makes a tall single serving or 2 smaller servings

4-6 coconut lime cubes

2-3 oz pineapple juice

1 oz rum (optional)

Place it all in a blender and blend until its a thick and slushy. Pour into a glass, garnish with lime and pineapple and enjoy.
