
Well the holiday season is upon us and in a few short weeks we will be celebrating Christmas. Making cookies is a delicious way to celebrate and I will be posting recipes for some of my favorite cookies and Chocolate thumbprints are right there at the top of my list, I hope you will enjoy as well. Here’s how to make them:
Chocolate Thumbprint Cookies
makes approximately 48 cookies
2 c all purpose flour
2/3 c unsweetened cocoa powder
1 c butter softened to room temperature
1 c sugar
1/4 tsp salt
1 egg
1 1/2 tsp vanilla extract
approximately 1/2 cup sugar to roll the cookie dough in before baking
Crushed candy cane for garnish (optional)
48 Hersheys kisses, I like to used the striped they look so festive
In medium bowl whisk the flour, cocoa powder and salt. In a large bowl beat butter and sugar with electric mixer until creamy, light and fluffy, add egg and vanilla and beat to combine. With mixer on low gradually add the flour/cocoa mixture until thoroughly combined. Heat oven to 350 degrees. Use a tbs size scoop portion of the dough, roll into a ball in your hands, roll in the sugar and place on parchment or silat lined baking sheet about 1 inch apart. Using your thumb make an indent on to top of each ball. Bake for 8-10 minutes ( depends on your oven) 8 minutes is best and NO LONGER THAN 10 MINUTES. Remove from oven and place an unwrapped kiss in the indent. Let cool completely, the heat from the cookie softens the chocolate kiss so you don’t want to disturb them until they are completely cooled. Sprinkle with some crushed candy cane if you like and enjoy.
