Ginger Molasses Cookies, chewy, spicy, sweet and so delicious

Warm spices, chewy and delicious these cookies scream holiday flavors. The cookies are easy to make and they are a wonderful addition to your holiday baking repertoire. Here’s how to make them:

Ginger Molasses Cookies

Makes approximately 36 cookies

2 1/4 c flour

2 tsp baking soda

1/2 tsp kosher salt

1 1/2 tsp cinnamon

1/2 tsp ginger

1/4 tsp allspice

1 stick(4 oz) salted butter at room temperature

1/2 c uncultured molasses

3/4 c brown sugar packed

1 lg egg

Granulated sugar to roll cookie dough in

Sift dry ingredients and set aside. Cream butter and brown sugar until light and fluffy, add egg and molasses, beat until smooth and well incorporated. Add the dry ingredients and beat or stir only until combined. Refrigerate dough for 1 hour. Heat oven to 375 degrees. Line sheet pan with parchment or silat. Use a 1 1/2 tsp scoop, roll into a ball and coat in the granulated sugar, place each ball on the baking sheet about 2 inches apart. Gently press down on each ball with your fingers to slightly flatten. Bake 12-13 minutes for soft and chewy or 15 minutes for a crisp cookie. Let cool on the pan for ten minutes and remove to cooling rack.
