
Flour tortillas made at home are simple and delicious and can be used for so many dishes, breakfast, lunch or dinner. They require no special equipment or hard to source ingredients, flour, baking powder, salt, fat, water and a skillet or grill, that’s it! Make a double batch and freeze them (separated by parchment paper) so you always have them when you crave a taco or burrito. Cinco de mayo is right around the corner! You can do this, here’s how to make them:

Flour tortillas
Makes 5 large or 8 small tortillas
2 c flour
1 1/4 tsp salt
1/4 tsp baking powder
4 tbs soft butter, veg shortening, lard or beef tallow
2/3 c lukewarm water
Whisk dry ingredients, cut in the fat with a fork add the water and mix with fork until it comes together. Knead for a few minutes until it forms a smooth ball. Cut into equal size pieces and roll each into a ball. Cover with a tea towel and let rest for 30 minutes. Heat a skillet (cast iron preferably) on medium heat. Roll each ball into a thin circle, place in hot skillet, flip over when you see it starts to bubble up, it only takes about 10 seconds per side. Remove to a clean tea towel, cover them and keep warm in the oven on the lowest temperature. If you want to freeze them separate each tortilla with parchment paper and place in a ziplock bag. Fill with your favorites, meat, beans, eggs, pico de gallo, rice, avocado, fajitas, whatever you like and don’t forget the hot sauce.
