Angel hair (capellini) with roasted tomatoes

Italian food is simple, using few ingredients, the key is to have the freshest seasonal produce, quality meat and cheese. This pasta dish is so simple its not really a recipe per se, It only requires roasting cherry tomatoes in the oven and boil some pasta, I used angel hair which is a super thin long pasta that cooks in just a few minutes. You can add whatever you like to make it your own, I chose to keep it simple. This is a quick and easy summer dish requiring very little time and effort and a perfect primi piatti. Here’s how to make it:

Angel hair pasta with roasted cherry tomatoes

2-3 servings

12 -16 oz cherry tomatoes cut in half

1 clove garlic smashed

olive oil

salt and pepper

1/2 lb angel hair pasta

Place cherry tomatoes and garlic on a parchment lined baking sheet, drizzle with olive oil. Bake in a 375 degree oven until soft and caramelized. Add the tomatoes and juices to a serving bowl and lightly smash with a fork, drizzle some more olive oil. Cook pasta according to package directions and remove directly into the cherry tomatoes, toss to coat the pasta and serve with grated parmigiano reggiano and a dollop of cold ricotta. Garnish with fresh basil.
