Migas burrito- breakfast of champions

Quick and easy to prepare this breakfast burrito tastes like a Denver omelette wrapped in a tortilla with a surprise ingredient. Add avocado, sour cream or crema and you have a delicious and nutritious meal. Start your day with a hearty breakfast that comes together in minutes. Here’s how to make it:

Migas burrito

makes 2-3 burritos

4 eggs whisked to combine

1 bell pepper chopped (jalapeño can also be used if you like it spicy)

1 small onion or shallot chopped

1 tomato or handful cherry tomatoes chopped

pepper jack and or cheddar cheese grated (as much as you want)

large handful corn tortilla chips broken into small pieces

2-3 flour tortillas warmed

garnish with cilantro, hot sauce, avocado, sour cream

Saute the onion, tomato, bell pepper until softened, whisk eggs and add to sautéed vegetables, when almost scrambled still very soft add the tortilla chips and grated cheese. Stir to combine. Spoon onto warm tortillas and enjoy with your favorite garnish/add ons.
