
Soup season is right around the corner and homemade bone broth, its nourishing and delicious on its own or made into soup. Whenever I make a roast chicken I never throw away the bones, place them in a zip lock bag and freeze them. Of course you can also use a whole raw chicken as well. Super simple to make but it takes time to simmer on the stove in order to extract the minerals and collagen. You can cut the time in half by using an instant pot. Freezes beautifully so you will always have it on hand. Here’s how to make it:
Bone broth
Bones of 2 chickens or 1 whole raw chicken
2 carrots peeled and chopped in large chunks
2 celery stalks chopped
1 onion washed, cut in half peel kept on
2-4 garlic cloves peeled and smashed
salt and pepper
NOTE: I also like to add parsnip, parsley, herbs (thyme, bay leaf, ginger, turmeric)
Put everything in a large soup pot, bring to a boil then lower to simmer for 6-8 hours. Strain out the bones and vegetables. If using an instant pot set on high for 2.5 hours. Store in mason jars until it cools then you can pour into a zip lock bag and freeze it.
