Soda bread is a simple quick bread that’s not just for St Patricks day, it’s wonderful with soup and stews or your cuppa in the morning for breakfast. I have tried many recipes and this is hands down the best, it’s moist and flavorful and very easy to make. Here’s how to make it:

Soda bread
Makes one large, 2 medium or 3 small loaves
1 cup mashed potatoes
2 tbs butter
1 tsp sea salt
1 1/2 c flour
1/2 c cake flour
1 tsp baking soda
1 1/2 tsp kosher salt
4 oz whole milk greek yogurt (1/2 cup)
4 oz lager (1/2 cup)
1 tbs honey
Peel potatoes and cut into chunks, boil until fork tender. Mash with 2 tbs butter and sea salt.
Preheat oven to 400 degrees. Sift dry ingredients into mixing bowl. Add the mashed potatoes, lager and honey. Mix only until combined, as with biscuits, less is more.
Dump dough onto floured work surface. Gently pat into desired shape or shapes. Transfer to parchment lined baking sheet and using a sharp knife cut a cross onto the top of the loaf or loaves. Bake 45-50 minutes (up to 60 minutes for large loaf) until golden brown. Let rest 15 minutes, best served warm.
