
Super Bowl Sunday (puppy bowl is fun too) is in just a few days and always at the top of my list for game day food is wings. Buffalo wings are simple to make, as spicy as you like and absolutely delicious. Serve with blue cheese or ranch dipping sauce and some crunchy vegetables. Just make sure to have plenty of napkins. Here’s how to make them:
Buffalo wings
serves a crowd
2 lbs chicken wings, drummettes separated from wing
2-3 tbs baking powder
salt and pepper

Separate wings or do like me and buy them already separate. Pat the wings dry with a paper towel. Sprinkle lightly with salt and pepper and toss with the baking powder until coated completely. The baking powder makes the wings extra crisp. Heat oven to 450 degrees. Place a rack on a foil lined baking sheet. Oil the rack by soaking a paper towel with cooking oil and coating both sides of the rack. Place the wings on the rack about an inch apart. Bake 45-50 minutes turning wing over half way through, until golden brown.

The sauce
NOTE: you can omit ketchup and use 1 c hot sauce if you prefer a more spicy wing
1 stick butter melted
1/2 c hot sauce (I like Franks red hot)
1/2 cup ketchup (Note if you like it with more heat reduce to 1/4 c and increase hot sauce 1/4 c)
2 tbs honey
Pour melted butter into mixing bowl whisk in hot sauce, ketchup and honey and mix to combine. Add the chicken wings and toss to coat. Serve with dipping sauce and crudite.
