
Delicious pureed broccoli soup is simple to make, nutritious and is ready in no time at all. Although the star of the show is broccoli there are other vegetables in a supporting role. You can get creative and add some grated cheddar cheese to make a cheesy broccoli soup. All you need is a salad and some good bread and you have a healthful delicious meal. Here’s how to make it:
Pureed broccoli soup
1 head broccoli cut into pieces
1 onion quartered
1 potato cut in quarters
1 carrot cut into large chunks
1 stalk celery cut into pieces
1 clove garlic
handful of parsley stems included
6 c water or broth of your choice
1/4 c heavy cream
2 tbs butter
pinch of nutmeg (optional)
salt and pepper to taste
Heat some olive oil in a soup pot, add the vegetables and lightly saute for a few minutes, add the liquid and bring to a boil. Reduce to medium heat and continue to cook until vegetables are tender.
Let sit for 15 minutes then scoop out the vegetables and half of the liquid (save the rest of the liquid for later) and blend/puree until smooth. Pour back into the soup pot. If too thick add some of the reserved liquid. Add the heavy cream, butter, pinch of nutmeg if using and season with salt and pepper. Simmer for a few minutes until soup is the desired temperature.
