
I remember as a child it was a treat when my Mom bought a tv dinner, to be honest they were not very good but still I looked forward to the occasional frozen meal eaten on a tv tray while watching tv. Salisbury steak, a simple economical meal is not steak its ground beef served with a rich gravy. Comfort on a plate, much needed after the elections. Here’s how to make it:
Salisbury steak
serves 4
1 lb ground beef
1 small onion grated
1/2 c breadcrumbs
1 tbs dijon mustard
1 tbs ketchup
generous splash worcestershire sauce
salt and pepper
Gravy
1 small onion sliced thinly
small package button mushrooms cleaned and sliced
2-3 tbs flour
2-2 1/2 cups beef broth
splash worcestershire sauce
2 tbs butter
salt (if needed) and pepper
Grate the onion over the breadcrumbs and let sit for 5 minutes. Add the ground beef, mustard, ketchup, worcestershire sauce, season with salt and pepper.
Form into oval shaped patties approximately 1/2 inch thick. Heat skillet with some olive oil and fry the patties until browned on each side (not cooked all the way through. Remove from skillet and set aside.
In same skillet add the butter, saute the onion until tender and mushrooms. Add the flour and cook stirring constantly for about 1 minute. Add the broth slowly while whisking, gravy will thicken, adjust if needed so it is pourable (not too thin or thick). Season with salt and pepper to taste. Add the patties back to the skillet and let them finish cooking in the gravy approximately 5 minutes. Serve immediately.
