
A grilled cheese sandwich does not have to be some cheese in between two slices of bread. This sandwich is full of flavor, gooey and a meal in itself. I used homemade sourdough sandwich bread but use whatever bread you have, mozzarella , provolone, tomato and pesto. No recipe really required, quick and easy. Enjoy with a bowl of soup or a salad for a delicious meal. Here’s how to make it:
Italian grilled cheese sandwich
2 slices of good bread
Pesto
sliced tomato
mozzarella sliced
provolone grated
butter to fry
Spread pesto on each slice of bread. Layer some mozzarella, sliced tomato and grated provolone, top with more mozzarella and the other slice of bread. Melt some butter in a frying pan on medium heat , carefully place sandwich and fry until golden brown and cheese begins to melt. Flip with a spatula and continue to fry until each side is golden brown. If cheese is not melted to your liking, turn off the heat and put a lid on the pan and let it sit for a few minutes.
