20 minute meal… steak, blistered tomatoes, buttered rice

Preparing a nutritious home cooked meal in less than 30 minutes may seem difficult but believe me its not. I made the rice in the instant pot (5 minutes cooking time takes about 5 minutes to build pressure), seared the steak, slicing it first, sliced cherry tomatoes in half and sautéed in same pan with steak drippings and a splash of balsamic vinegar (optional) topped with a lot of fresh parsley and voila a meal that’s delicious and nutritious in less than 30 minutes. Make it your own add whatever you like, garlic, onion are good options. Here’s how to make it:

Rice

Add 1cup rice and one cup water to instant pot with a pinch of salt and tbs of butter. Pressure cook on high for 5 minutes. Let sit for 5 minutes then release the steam. Fluff with a fork. NOTE: you can make more rice its always a 1:1 ration (e.g. 2 cups rice, 2 cups water)

Steak

Slice steak in approximately 1/4 inch thick slices. Heat sauté pan add some butter and olive oil, sear the steak seasoned with salt and pepper, only until browned on both sides. Remove from pan set aside. NOTE: I had a 1.5″ sirloin approximately 1 lb it was enough for 2 people

Tomatoes

Slice cherry tomatoes in half, saute in same pan with drippings on medium high heat until blistered, add pinch of salt and pepper and a splash of balsamic vinegar (optional)

Put steak back in pan with the tomatoes and saute for just a minute for medium rare steak, 2 minutes if you like your steak well done. Serve on top of rice spooning some of the pan juices on top.
